With its ultra-chic exterior, hand-sewn by Lázaro Rosa-Violan, founder of the architecture studio of the same name, who designed the space like an expertly tamed urban jungle. After an introductory speech signed by the head bartender Agatha Potel, whose cocktails brilliantly combine the spices and flavors of Latin America or Japan, it’s time for the “summer” that has just arrived. Designed by Lucas Felzin, the avant-garde chef who opened the UMA Fusion Table 10 years ago, the menu itself is the promise of a wonderful journey, discovering French gastronomy intertwined with Nikkei influences. Courage, love of contrasts, impeccable marinade skills and cooking on a Japanese barbecue – this is how you can characterize Chef Felzin’s cuisine. Don’t miss: veal tacos with buckwheat, Nikkei guacamole and black shallots, black cod cod with miso and ajl amarillo or wagyu bavette sumiyaki, jalapeño sauce, peanuts, wasabi parsley.
